TexMex the Indian way- Paneer Fajitas!

TexMex, traditionally includes fix ins which vegetarians do not enjoy. So I modified a recipe, that us vegetarians can make at home and relish! Sharing a delicious recipe of Paneer or cottage cheese fajitas-

Ingredients- 
1 packet Tortilla wrap (I used a brand called Salsatino) 
For the stuffing:
300 gms Paneer (cottage cheese) cute in finger size lengths 
1 large red and yellow pepper 
10 button mushrooms, cleaned and sliced vertically 
2 cloves minced garlic 
1 bunch fresh parsley leaves 
1 large onion sliced 
chopped jalapenos 
Lettuce leaves (washed, towel dried and torn by hand into small pieces)
1 tbsp olive oil 
salt and pepper to taste 
Mixed italian herbs and red chilli flakes 
For the sour cream: 
2 large cups hung curd ( all water squeezed out) 
4 cloves minced garlic 
2 cubes cheese (grated) 
chopped parsley leaves 
Pepper 

Method: Filling 

In a pan, heat one 1tbsp of olive oil. Add chopped garlic and let it roast. Add sliced mushrooms and stir till mushroom is soggy and leaving the juice behind. Add bell peppers and stir till cooked. Add salt, pepper, italian herbs and cook till the quantity reduces still half. Add fresh parlsey and turn off the burner. Let it rest

Method: Paneer filling 

In a pan use left over olive oil from the previous cook to grease. Add chilli flakes and parsley. Add paneer to it and let it pan grill slightly. Turn off the burner

Method: Sour cream 

In a bowl, combine the hung curd, garlic, parsley, pepper and grated cheese. Mix it well. Do not add salt since this dip uses the salt from the cheese. Refrigerate till the actual serving time.

Method: Final Fajitas 

On a tawa, heat both sides of the ready tortilla for 10 seconds each. (let the tawa run while you take the tortilla to a plate for final assembling). Add a generous helping of the sour cream as base to the tortilla wrap. (leave the edge side empty since it will be folder later, burrito style).

Add the pepper and mushroom filling. Top it with the grilled paneer. Add fresh onion, jalapenos and torn lettuce leaves. Top it off with some cheese sauce (I used cheddar) and some more sour cream.

Roll the wrap and fold the edges inside to make a parcel (like a burrito). Put it on a slight greasy tawa and toast it till light brown.

Serve with a cheese sauce or mayo dip.
